The scheme Process monitoring specialist from the farm to the slaughterhouse refers to a qualified professional who supports all those tasks that take place at both the administrative and production level of a (primarily) ungulate slaughterhouse. He/she assists the team of veterinarians in the day-to-day management and operation without being autonomously involved in the operation of the slaughterhouse.
