HACCP Food Safety

The HACCP Codex Alimentarius is an international specification based on the preventive management of food safety issues, and its implementation is mandatory according to both European and Greek legislation. TÜV HELLAS provides certification services for Food Safety Management Systems in accordance with the HACCP Codex Alimentarius specification, under German accreditation (Deutsche Akkreditierungsstelle - DAkkS).

The HACCP Codex Alimentarius is an international specification issued by the Codex Alimentarius Commission, focusing on a preventive approach to food safety management. Its application is mandatory under European and Greek legislation. The system is based on a set of hygiene principles including:

  • Hazard analysis and identification
  • Evaluation of hazard criticality
  • Establishment of Critical Control Points (CCPs)
  • Definition of critical limits
  • Documented monitoring and verification of preventive measures

By monitoring and verifying the effectiveness of the measures taken, a preventive food safety management system is established, ensuring compliance with legal requirements and serving as a tool for continuous improvement.

The HACCP Codex Alimentarius applies to all businesses involved in the food supply chain, including:

  • Primary sector enterprises (animal farming, plant product cultivation)
  • Secondary sector enterprises (processing for food and feed production)
  • Businesses involved in storage, distribution, wholesale, and retail
